Milnerton Deli Display

A neighbourhood deli in Milnerton needed new display refrigeration during a shop refurb, with tighter temperatures and better day-to-day service. We replaced the old units, set up the new display line, and handed over a system the staff could work with from opening day.

Milnerton Deli Display

Refurbishment Brief for a Busy Milnerton Deli

The client was a family-run deli serving walk-in customers, takeaway meals and fresh goods in Milnerton, close to the R27 traffic and the coastal air off Table Bay. Their old display units were uneven on temperature, the doors were not sealing well, and product loss had become a concern during warmer afternoons and load-shedding interruptions.

The brief was straightforward: replace the ageing display refrigeration, keep the shop trading where possible, and make sure the new setup fit the counter line and the available power feed. The deli wanted cleaner product presentation for cold meats, dairy, salads and drinks, with a system that would not need constant attention from staff who were already busy on the floor.

We also had to work around a refit programme that included new shelving, floor repairs and counter changes. That meant the refrigeration work had to be timed carefully so the contractor could keep moving without leaving open gaps for too long. In a food shop, every hour matters and if the cold chain slips even once, stock takes the hit.

Site Constraints We Worked Around

This job had a few practical limits. The shop is in a mixed trading area, so deliveries had to be booked for quieter times and the old units had to come out without blocking the pavement or creating too much mess for neighbouring traders. The building also had limited back-of-house space, which meant we had to plan exact clearances for airflow, service access and cleaning.

The site is exposed to coastal humidity, so corrosion protection was important from the start. We checked for moisture points around the condenser location and made sure the drainage could handle regular wash-downs. Power supply was another consideration because the deli had experienced voltage dips during outages and restarts, so the new system needed a stable start-up sequence and sensible protection for the controls.

  • Limited service yard space for lifting and removal
  • Coastal humidity and salt air exposure
  • Refit work taking place at the same time as refrigeration installation
  • Need to keep food stock cold during the changeover
  • Power interruptions and restart management

What We Supplied and Installed

We supplied a replacement display refrigeration arrangement matched to the deli counter length and product mix. The setup included multi-deck chilled display units for grab-and-go goods, a dedicated chilled section for dairy and prepared foods, and controls set for stable holding temperatures through the trading day. We also replaced worn service items that had been causing nuisance faults, including damaged seals, tired drain parts and blocked sections in the old line.

The installation was handled as a proper food retail job, with the emphasis on clean fitment, accessible servicing and reliable operation rather than fancy extras. The cold room support work was checked at the same time so the back-up storage side would keep pace with the front-of-house display units. Where needed, we adjusted pipe routes, verified insulation and tested for leaks before commissioning. The end result was a cleaner run of equipment that suited the deli layout and the staff workflow.

  • Replacement chilled display units sized to the counter run
  • Control settings for holding temperatures between 2 C and 5 C depending on product zone
  • Drain connections cleared and reworked for better discharge
  • Seals and service parts renewed on ageing sections
  • Commissioning, temperature checks and handover at completion

Timeline From Removal to Start-Up

The full project ran over three weeks. Week one was the site survey, measurements, checking of electrical points and coordination with the shop refit team. Week two covered removal of the old display refrigeration, delivery of the new equipment and preparation of the installation area. Week three was installation, pressure testing, start-up, temperature logging and staff handover.

That schedule kept the deli moving and reduced downtime. We staged the work so the existing stock could be managed safely while the changeover happened in sections. The team on site also had to be flexible because the refit crew discovered a few floor-level issues once the old counters came out, so we adjusted the installation sequence to suit the actual site conditions rather than forcing the job to fit the first plan. That saved time and avoided a bodged finish.

Results the Deli Could See and Measure

Once the new display refrigeration was running, the first change was temperature stability. Product lines held more evenly across the cabinets, and the staff were no longer moving stock around to find the colder spots. The shop also gained better visibility for products, which helped with presentation at eye level and reduced the amount of time doors or lids had to stay open during topping up.

We recorded the start-up readings and checked performance under normal trade conditions, including the afternoon rise in ambient temperature. The deli now has a refrigeration setup that is easier to clean, easier to service and better suited to day-to-day use. It also copes better with the stop-start nature of local power interruptions because the system was set up with proper restart checks and logging. For the client, the main gain was simple: less spoilage, less stress and a counter that keeps trading properly.

  • More even cabinet temperatures across the display line
  • Cleaner product presentation for fresh foods and drinks
  • Reduced spoilage from weak seals and uneven cooling
  • Better access for daily cleaning and service checks
  • Clear temperature records for the shop manager

What We Would Do Again on a Similar Shop Fit-Out

If we were doing the same sort of deli refurbishment again, we would keep the same approach: survey early, measure twice, and coordinate tightly with the builder and shop owner before any removal starts. On small food retail jobs, the biggest problems usually come from poor sequencing, not from the refrigeration equipment itself.

We would also keep the maintenance plan in place from day one. For a deli in Milnerton, that means regular coil cleaning, drain clearing, seal checks and temperature logging, especially through summer and during power cuts. With the right follow-up, the new display line should keep its performance and avoid the usual call-out faults that build up when nobody gets underneath to see whats going on.

For shops and farms across Cape Town, the Winelands and the West Coast, that is often the difference between a unit that only just survives and one that keeps its job properly for years.

Ongoing Support for Display Fridges and Cold Rooms

Although this project was about a deli counter replacement, the same team now looks after refrigeration and aircon maintenance across the Western Cape. Our planned maintenance work covers display fridges, cold rooms and split aircon systems, with emergency call-outs when stock or trading is at risk. We work from Montague Gardens and cover Cape Town, Stellenbosch, Paarl, Malmesbury, Vredenburg and the surrounding areas.

For food shops, the useful part is the follow-through. A new installation still needs cleaning, logs and seasonal checks to stay reliable. We can arrange maintenance contracts, temperature logging, leak detection, seasonal start-up and shutdown preservation so the equipment keeps performing through busy trading periods and the harder winter months near the coast.

What clients say

Questions we get asked

Can you replace deli display refrigeration while a shop refurbishment is still underway?

Yes. We plan the changeover with the shop owner and builder so the old equipment comes out and the new line goes in without holding up the refit more than needed.

Do you handle temperature logging and follow-up after installation?

Yes. We can set up logging, carry out checks after start-up and include the unit in a maintenance plan if the client wants ongoing cover.

Do you only work in Cape Town?

No. We are based in Montague Gardens and work across the Western Cape, including the Winelands and West Coast towns such as Stellenbosch, Paarl, Malmesbury and Vredenburg.
